Bell Peppers Stuffed w/ Tempeh

When I made it, I didn't have fennel seeds, mint, basil, tomato paste or mushrooms, but it was still delicious. I recommend boiling the tempeh for at least 5 minutes before using it because that will hydrate it and plump it up a bit before marinating. I also added carrots and chopped up zucchini which was even more delicious. You can also stuff zucchini instead of peppers.
