Hummus

Serves: 4+

Time: 5 minutes (35-40 minutes if you cook the garbanzo beans from scratch)

Ingredients:

1 cup dry garbanzo beans soaked overnight and cooked in an instant pot or on the stove (yields about 3 cups cooked) or 2 cans low sodium garbanzo beans, drained and rinsed

1/3-1/2 cup tahini paste

Squeeze of lemon (start with a little and add until hummus reaches desired flavor)

1/4 - 1/2 tsp salt (or to taste)

Paprika (optional)

2 Tbsp parsley, chopped (optional)

Directions:

Reserve about 3/4 cup cooked garbanzo beans. Combine the remaining 2 1/4 cup garbanzo beans with tahini, lemon and salt in a food processor or blender (hand blender works as well) and mix until it reaches desired consistency. Taste and add any additional lemon, tahini or salt as you wish. Place in a bowl and top it with the reserved whole garbanzo beans. Sprinkle paprika and parsley on top and serve.

Here’s a quick and easy snack or meal.

Spread hummus on your favorite bread or toast and top with your favorite ingredients like sliced tomatoes, sliced mushrooms, spinach, onions, pickles, sauerkraut, roasted peppers, you name it.
