Easy Salsa Fresca

Servings: 4

Time: 10 minutes

Ingredients:

3-4 tomatoes, diced (Roma tomatoes work well since they are firm)

1/4 - 1/2 purple onion, diced

1/2 jalapeno or Serrano peppers (seeds removed if you don’t like spicy food), chopped

1/2-1 lemon, squeezed (start with half a lemon then taste)

1 cup chopped cilantro

Optional: fresh spinach, chopped

Pinch of salt

Optional (but really good):

  • 1/2 - 1 tsp cumin OR 1/2 tsp Mrs. Dash Southwest Chipotle seasoning blend

Directions:

Combine all ingredients in a bowl. Enjoy in a burrito or over rice, potato, lentils, tofu scramble, etc. This salsa stays fresh for about two days so be sure to serve plentiful portions with your meal to eat it up quickly!
