Quick Veggie Medley

Time: 20 minutes

Ingredients:

3-4 cloves garlic, chopped

1 large onion, chopped coarsely

2 large bell peppers (red, orange and/or yellow), chopped or 2 handfuls of mini bell peppers, sliced in rounds

1 jalapeno or serrano chili, chopped coarsely (optional, if you like some heat; jalapenos are hotter)

1 zucchini, chopped in small cubes

3-4 medium tomatoes, chopped (or 1 1/2 15 oz cans of diced tomatoes)

1 cup water

Optional: 1/2 tsp smoked paprika

Directions:

Saute the garlic, onion, bell peppers and chili in water on medium heat for about 5 minutes. Add the zucchini, tomatoes, smoked paprika (optional) and water and cook for 10 minutes, giving the tomatoes time to soften and release their juice.

Allow to cool for a few minutes and serve. The natural flavors of the vegetables give this medley a delicious flavor, but feel free to add a little salt at the plate if desired.

This medley goes great with grains, potatoes, beans, lentils and tofu. In fact, a super easy and delicious meal is beans or lentils from a can (rinsed) and heated briefly in the microwave or on the stove, a whole grain (rice, millet, quinoa) or potatoes (regular or sweet potatoes, steamed or roasted), and a generous serving of this medley. Corn would be a great addition as well. Another way to enjoy this medley is as a topping on toasted bread, maybe with some homemade hummus underneath!
