Easy Tomato Sauce

Servings: 4

Time: 20 minutes

Ingredients:

5-6 cloves garlic, chopped

1/2 cup white wine of choice (optional)

5 medium tomatoes, cut in quarters

1 small package of white button or portobello mushrooms, sliced

Handful of fresh basil, chopped

Pasta of choice

Optional: red pepper flakes

Directions:

Get the pasta cooking.

In a saute pan, saute the garlic in water for 1-2 minutes (careful not to burn the garlic). Add the white wine and cook for just 1 minute. Add the tomatoes and cook for about 10 minutes until the tomatoes soften. Crush the tomatoes with a masher to release the tomato juice just enough so that some chunks of tomato remain. Add the mushrooms and cook for about 3 minutes. Turn off the heat and sprinkle with fresh basil. Stir in the basil and serve over pasta. If you like a little heat, sprinkle some red pepper flakes over you meal.
