One Pot Chili
Servings: 4
Ingredients:
1 onion (yellow or purple), chopped
3-5 garlic cloves, chopped
½ bell pepper (any color), chopped
1 carrot, chopped
3-4 tomatoes or 1-2 15 oz can diced tomatoes (low or no sodium)
½ - 1 tbsp tomato paste
½ - 1 cup water
1 1/2 cups home-cooked kidney beans (or ½ 15 oz can kidney beans, drained & rinsed)
1 1/2 cups home-cooked black beans (or ½ 15 oz can black beans, drained & rinsed)
1 cup frozen organic corn (optional)
1 tbsp chili powder
1 tsp cumin
½ tsp coriander
¼ tsp paprika
¼ tsp salt
Optional:
¼ Jalapeno, finely chopped
¼ tsp smoked paprika
Directions:
Place all ingredients in a pressure cooker or pot on the stove and cook for 15-20 minutes until carrots are soft, all flavors are mixed and dish is hot and delicious!
