Roasted Yams, Sweet Potatoes, or Potatoes (oil-free)

Ingredients:

4 potatoes

3 sprigs rosemary OR 1 tsp dried rosemary leaves.

Directions:

Preheat oven to 500 degrees Fahrenheit.

Cut the potatoes in wedges or discs, as you like. Place them on aluminum foil in a roasting pan. Sprinkle salt and pepper on the potatoes and place about 3 whole rosemary sprigs in with the potatoes (or sprinkle 1 tsp of dried rosemary leaves on top). Cover the potatoes with another sheet of aluminum foil, closing tightly so that steam is trapped inside.

Bake for 40 minutes covered. Remove top layer of aluminum foil and bake another 20 minutes .
