Fresh Taboule
Ingredients:
2 bunches of parsley, chopped
1 bunch of mint, chopped
1 bunch of green onion, chopped
½ cup fine grain bulgur wheat
2 cups tomatoes, chopped
1 shallot, chopped
1-2 Tbsp olive oil
½ - 1 lemon, squeezed
½-1 tsp cumin (to taste)
Salt to taste
Pepper to taste
Optional: 1-2 Tbsp olive oil
Directions:
Soak the bulgur in hot water for 20 minutes.
Chop all of the fresh ingredients by hand and mix together in a bowl. Alternatively, chop the parsley and mint in a food processor before combining with other fresh ingredients. Add bulguar, lemon, cumin, salt and pepper and mix. Taste and add more lemon, salt, pepper, and/or cumin if desired. This is great served on top of red leaf or green leaf lettuce.
